Ingredients:-
Coriander seeds, red chili, cumin seeds, pepper, fenugreek, mustard, cinnamon, cloves, curry leaves, chana dal and urad dal.
Cooking Instructions:-
1. In a pressure cooker or a pot, add 3 tbsp toor dal, 3 cups water, 1/2 tsp oil, and a pinch of turmeric powder. 2. Cook the dal until it becomes soft and mushy. If using a pressure cooker, cook for about 4-5 whistles, or if using a pot, simmer until the dal is cooked. 3. In a separate pan, add 300g of cut vegetables and 1 cup water. Cook the vegetables until they are tender. 4. Once the dal and vegetables are cooked, combine them together in a large pot. 5. In a grinder or blender, add 1 tbsp ghee, Masala Sambar Powder (use the desired amount according to your taste preferences), 1 tsp coconut, and 1/2 cup water. Grind them to form a smooth paste. 6. Add the ground paste to the cooked dal and vegetables. 7. Stir in 2 1/2 tbsp tamarind pulp, salt to taste, and 1 tsp jaggery into the pot. Mix well. 8. Bring the sambhar to a boil and let it simmer for about 5 minutes to allow the flavors to meld together. 9. In a small pan, heat 1/2 tbsp oil. Once the oil is hot, add 1/2 tsp mustard seeds and curry leaves. 10. Allow the mustard seeds to crackle and the curry leaves to release their aroma. 11. Pour the tempering (mustard seeds and curry leaves) into the sambhar pot and give it a final stir. 12. Your sambhar is now ready to be served with rice, idli, dosa, or any other South Indian dishes.
